General information
Occupational groups who handle certain foods commercially require a certificate of instruction from the public health department for the first time before starting their work in accordance with Section 43 (1) IfSG. This means all persons who professionally handle the foodstuffs listed below (e.g. manufacture, treat, prepare, sell) and come into contact with them directly (by hand) or indirectly (via utensils such as crockery, cutlery or other work materials).
This applies in particular to people who work in kitchens in restaurants, canteens, hotels, guest houses, etc. and other facilities with communal catering such as day care centers, retirement and nursing homes and hospitals for the first time or are employed there.

Procedure for Providing the Instruction
The training can be completed either in person here at the Public Health Department—for which you must book an appointment online in advance—or you can complete the training online.
After the training—whether in person or online—you will be issued a certificate of participation. You must also submit a written statement confirming that you are not aware of any circumstances that would warrant a prohibition on practicing your profession.
You will then receive the certificate of participation.
If there is reason to suspect that you may not be eligible to receive the certificate—for example, due to a foodborne illness—you will not receive the certificate until a doctor has ruled out the suspected illness based on an examination.
The certificate states that you have been informed of your legal obligations, particularly regarding which infectious diseases would prohibit you from working in the food industry.
