Occupational groups who handle certain foods commercially require a certificate of instruction from the public health department for the first time before starting their work in accordance with Section 43 (1) IfSG. This means all persons who professionally handle the foodstuffs listed below (e.g. manufacture, treat, prepare, sell) and come into contact with them directly (by hand) or indirectly (via utensils such as crockery, cutlery or other work materials).
This applies in particular to people who work in kitchens in restaurants, canteens, hotels, guest houses, etc. and other facilities with communal catering such as day care centers, retirement and nursing homes and hospitals for the first time or are employed there.
